  1. It's 1 Pound of Beef Rump (trimmed of fat, sliced thinly).
  2. It's 1 Bunch of Coriander (chopped).
  3. You need 1 of onion Red salad (sliced thinly).
  4. You need 1 of Red bell pepper (sliced thinly).
  5. You need 1 Bunch of Bean sprouts.
  6. You need 1 Bunch of Chinese leaf (sliced thinly).
  7. It's 2 Tablespoons of cashew nuts Toasted.
  8. Prepare 1 of Red chilli pepper (diced finely).
  9. It's 1 Tablespoon of Ginger root , (minced).
  10. Prepare 4 Tablespoons of soy sauce light.
  11. It's 1 Tablespoon of fish sauce.
  12. Prepare 2 Tablespoons of mirin.
  13. You need 2 Cloves of garlic (crushed).
  14. You need 1 of lemongrass (sliced) Stalk.
  15. You need 1 Tablespoon of lime juice fresh.
  16. Prepare 1 Tablespoon of brown sugar soft.
  17. You need 1 Tablespoon of sesame oil blended.
  18. You need 1 Bunch of broccoli tenderstem (blanched briefly & sliced).

  1. Marinate beef with half of the soy, half minced garlic, half minced ginger, half diced chilli. (let marinate over night for best flavour).
  2. Add remaining soy, mirin, fish sauce, lime juice, lemongrass, reamining chilli, ginger, garlic, sugar & sesame oil to a seperate mixing bowl and whisk vigorously..
  3. Heat a wok with 2 tb sp of vegetable oil, stir fry beef quickly for 2-3 mins until cooked..
  4. Toss all other ingredients asides nuts with the dressing, assemble and place beef over with cashew nuts & coriander for garnish..
